Beef Or Mutton Shank: 1.5 Kg
Nali bones: 1 kg
Dry Fat: 250 gm
Goat Brain: 3 (For Maghaz Nihari)
Ghee/Oil: 1 Cup
Water: 1.5 Liter or 50 Fl Oz
Ginger Paste: 3 Tbsp
Garlic Paste: 3 Tbsp
Whole Wheat Flour: 1/2 cups
REGULAR GROUND SPICES:
Salt: 1.1/2 Tbsp
Chili Powder: 2 Tbsp
Kashmiri Chili Powder: 3 Tbsp
Haldi (Turmeric) Powder: 1/2 Tea Spoon
Jyfal (Nutmeg) Powder: 1/2 Tea Spoon
Javetri (Mace) Powder: 1/2 Tea Spoon

SPECIAL NIHARI SPICES
Sonthh: (Dried Ginger) Powder: 2 Tbsp
Pipli (Long Pepper) Whole: 4
Sounf (Fennel) Seeds: 3.5 Tbsp
Bidian (Star Anise): 1
Green Cardamom: 8
Ajwain (Carom) seeds: 1/2 Tea Spoon
Black Cumin seeds: 1/2 Tbsp
All Whole spices will be grounded very very fine like powder.
GARNISH:
Thin Sliced ginger
Thin Sliced Green Chili
Lemon or Lime
NOTE: Final Gravy Volume should be 9 Measuring cups (1 Cup=235 ml)

Do you know how to make daal kay kabab wala bun kabab? There was one vendor (reri wala) on burns road which had the best one. It was not on the main road though.

looks really tasty. Pichlay saal aap ki slow cooking wali nihari 1st time banai thi..bohat he mazadar bani thi. Peepli bohat talash k ba'ad aik indian shop say mili thi..waqai peepli aur saunf nein khushboo aur zaiqa dubala kar deeya tha. Is recepie key ingredients aur quantity ka intizar rahay ga…JazakAllah.
