Navrati in India is considered a very auspicious time for majorly the Hindu community. One observes fast during this time of the year and there are particular foods that are consumed. While observing fast it is laid out not to consume whole grains but fruits are considered appropriate to be consumed. So there are many desserts that are made to be consumed during Navrati and one such is Lauki ka halwa or Bottle gourd halva. There are quite a vriety in the way its prepared but we are sharing a simple and easy way. The story of Lauki ka halwa is that it is a traditional Indian dessert also known as Dudhi Halwa and become quite popular in the UAE as well. There are ways in which this Halwa is prepared and one such way is Lauki ka halwa with Khoya or mava. It tastes similar to Gajar ka halwa but is ver delicious and light on taste. So while you are fasting on Navratri you can easily make this Dudhi ka halwa with mawa recipe and enjoy at home. So let’s begin.

Serves: 2people

Ingredients:
1. Ghiya/Bottle gourd: 1kg
2. Sugar: 250gms
3. Desi ghee: 3-4tbs
4. Cardamom powder: 3-4 tbs
5. Almonds: a few(fine chopped)
6. Cashew: a few(fine chopped)
7. Khoya/Mava: 250gms
8. Dry fruits: For Garnish(Cashew/Almonds)

Method:

Step 1: Grating the Lauki
First of all take the bottle gourd and peel off the skin. Then cut into big pieces and scoop out the seeds.
Now, grate the bottle gourd with a grater. Squeeze off the juices from the grated bottle gourd and keep in a bowl.

Step 2: Frying the Halwa
Take a medium kadhai and pour Desi ghee in it and heat up. Put the grated bottle gourd in it and stir well so that it doesn’t stick to the bottom. Cover the kadhai with lid and cook for about 5mins but do keep stirring in between.

Now, when the bottle gourd is cooked add sugar and mix well and let the sugar melt and mix with the bottle gourd. While that is happening the lauki will start emanating water so cook well on high flame and keep stirring so it doesn’t stick to the bottom.

Step 3: Adding khoya and dry fruits
When the bottle gourd is cooked well, add the khoya and mix well so that the khoya melts and mixes well with the Lauki giving it a rich consistency. Keep cooking for 1-2mins while continuously stirring.
Now it’s time to add the cardamom powder and the dry fruits as well. Add the chopped cashew and shredded almonds as well and mix everything and cook well. The halwa is ready.

Step 4: Serve up

The super tasty Lauki halwa is ready to be served. Serve it in a bowl with a little more garnishing of dry fruits and enjoy.

Notes:
1. Seeds of Bottle gourd need to be removed so that the halwa tastes super nice.
2. While cooking the Lauki it’s important to keep stirring so it doesn’t stick to the pan.
3. Lauki is watery in nature so it needs to be cooked thoroughly so it’s nice and not runny.
