3. Moong dal namkeen: 50gms
4. Aloo bhujia namkeen: 50gms
5. Carom seeds (ajwain): 50gms

11. Refined oil: 4tbs
12. Cashew: a handful(diced in small pieces)
13. Sugar: 1tbs
14. Desi ghee: 2tbs
Method:
Step 1.
Kneading the dough.
In a bowl take maida, ajwain, ¼ tbs salt, 4tbs refine oil and mix well. Gradually add water and knead the dough a little firmer than we need for rotis.
Cover and set aside for 10mins.
Step 2.
Filling.
Grind the namkeens- aloo bhujia, moond dal namkeen, sevda namkeen, fennel, sugar into a little coarse powder.
Pour the mixture in a bowl, add garam masala, amchur powder, salt, red chili powder, and diced cashews and mix well. Add 2tbs desi ghee so the mixture binds well and doesn’t fall out of the samosas.
Step 3.
Making the samosas.
Knead the dough once again a little so it is nice to roll. Make rolls out of the dough and cut small equal portions with a knife. Make small balls out of the portions.
Now with a rolling pin roll the dough balls into oval shape and cut into two halves.
Take one half and brush the edges with water and stick them together to make a cone so that the fillings don’t fall out. Fill it with the fillings we made and seal the opening with brushing a little water and pressing firmly. Do this with all the dough balls. Let them rest for 10mins before frying.
Step 4.
Frying the Samosas.
In a kadhai pour refine oil and warm up a little. Place the samosas and fry on a low flame with patience. Keep frying them while stirring till they start to turn a little golden in color. Take them out on a plate.
Step 5.
Serve up.
Serve these super tasty mini samosas as a quick bite or an evening snack. I am sure kids or even adults would love it. Enjoy and Happy cooking!
Note:
1. Knead the dough a little tighter than usual dough for roti so that the samosas are soft and crispy.
2. It’s important to seal the samosas nicely so that they don’t break out while frying.
3. Frying the samosas need patience, fry them nicely while stirring them up and down.
