Desserts are an all time favorite in the Indian homes. Whenever there are festivities around there is particular sweet or dessert preparation that is associated with it and one such dish is super yummy and heavenly Gujiya which is prepared around the time of Holi. Gujiya is a super amazing sweet which has a great filling of sooji, khoya and dry fruits with perfect sweetness. Buying desserts at the local shop isn’t healthy neither tastes well so preparing this super yummy dessert at home is a great way to add the touch of magic in the festivities celebration spirit. Gujiya is patent Indian dish which is offered to Gods during festivities pan-India as it is considered to be the purest of dessert as it has no impure ingredients the most basic and pure ones. Gujiya or Perukiya is Bihar is super yummy dessert with a very distinct shape and is not a great task to make. We have here the Sooji khoya Gujiya recipe simplified which is a step by step with pictures Gujiya recipe.

Cook Time: 10mins
Serves: 18-20nos

Ingredients:
1. Maida: 250gms
2. Sooji: 75gms
3. Powdered Sugar: 125gms
4. Khoya: 125gms
5. Dry Coconut: 125gms(grated)
6. Raisins: 30gms
7. Cashew and almonds: 20gms(fine chopped)
8. Cardamom Powder: 10gms
9. Desi ghee: 100gms

Method:

Step 1: Making the Gujiya dough

In a medium bowl take the maida and pour about 75gms of desi ghee as the rest will be used for frying the Sooji.
Mix it well and add water gradually and knead a dough nicely a little tighter than the dough for chapati’s.

Step 2: Roast the sooji

In a medium pan pour the sooji in and add the ghee we kept aside and roast it well till light brown. Do not burn it though and when done keep in a bowl.

Step 3: Roast the khoya

Furthermore, in the same pan put the khoya in and roast it till it softens. Keep it in the same bowl as the sooji.

Step 4: Making the filling

Now mix the khoya and sooji well and then add the grated coconut, raisins and chopped dry fruits, Cardamom powder and mix well.
Now, add the powdered sugar and mix it well with the ingredients.

Step 5: Making the Gujiyas

Now take small portions out of the maida dough and make small round balls so that the layer for Gujiya can be rolled out.
Now with the help of a rolling pin, roll the balls in a very thin poori shape.

Now take the appropriate gujiya mould as per choice and to seal the Gujiya we have dissolved a little maida with water and kept in bowl for use.

Place the maida we rolled in the Gujiya mould and then fill about 1- 1 ½ spoon of filling into it and put a little Maida water mixture we made and then press close the mould to seal it. Make all the gujiyas from the maida and filling.

Step 6: Frying the Gujiya

Now put a medium kadhai with oil on gas on medium flame and heat up and carefully place the Gujiyas in and fry till they turn golden brown from all the sides and then take them out in a plate.

Put a little grated coconut as garnishing and a little dry fruits and serve well.

Note:
1. The dough of Gujiya needs to be a little tighter than of poori or rotis.
2. Roasting Khoya lets the Gujiya have a long shelf live and make it even yummier.
3. There are Gujiya moulds available in the market and with them it is super easy to make the Gujiyas.
4. The balls needs to be rolled super thin as the outer layer of gujiyas will be light when fried.
5. Do not overfill the filling as it might make the Gujiya to break out.

Buying sweets and desserts around the time of festivities can be quite a task as finding the purest of products around that time is like searching for a needle in a haystack. We get all the impurities mixed sweets in the market that are not even delicious but way too expensive.
