Well it is basically a desi take of a classic Chinese dish that is Chili pork/meat. In classic Chinese dishes one may find meat cooked with lots of vegetables in a dark brown sauce. Well that’s exactly how chili paneer is made just instead of meat there is PANEER! How convenient Chili paneer tastes super good and we Indians are quite found of spicy Chinese food. That’s how Chili paneer got into our lives. Almost around all parts of India one may find great tasting Chili paneer being serves especially in North Indian streets. Homemade Chili paneer is always my favorite. Making Chili paneer or Chili pork or Chili chicken, it’s all in the gravy. We have shared a step by step dry chili paneer recipe but one can make chili paneer gravy similarly too. It’s basically nothing but a Indian chili paneer recipe for you to try and love. So let’s begin and learn how to make chili paneer at home and that too super easily!

Serves: 2people

Ingredients:
1. Capsicum: 3nos(green and cut into 1inch cubes)
2. Paneer: 200gms(cut into big cubes)
3. Onion: 2nos(cut into 1inch cubes)
4. Fresh coriander: a little(chopped)
5. Maida: 6tbs
6. Corn flour: 4tbs(One can use arrowroot flour as well)
7. Garlic: 1tbs(fine chopped)
8. Salt: 1tbs
9. Kashmiri red chili powder: 1tbs
10. Soya sauce: 1tbs
11. Vinegar: ½ tbs
12. Ginger: 1inch (chopped)
13. Black pepper powder: ½ tbs
14. Refined oil: 3-4tbs
15. Oil for frying

Method:

Step 1: Coating the paneer
The great taste of chili paneer lies in the juiciness of the paneer in it and the paneer needs to be seasoned and coated well. So at first pour the maida in a bowl, put 2tbs of corn flour (rest would be used in gravy)and put 1/4tbs of salt in it and little black pepper powder.
Mix everything well and add water gradually and make a lump free and a little thick batter so the paneer can be coated well in it.

Step 2: Frying the paneer
Now turn the gas on and heat up oil in a kadhai. When it warm enough then coat the paneer cubes in the batter we made and carefully place in the oil to fry up. Let it set for a min or two and then stir a little. Turn them over nice and easy. Paneer tends to stick together so carefully turn them over.
Fry the paneer chunks till they are nice and little yellow in color. Take them out once they are fried up nice.

Step 3: Making the chili gravy
Now take a pan and pour 3tbs of refined oil in it and warm up. When the oil is heated up well put the chopped garlic in it and then the chopped ginger as well. Fry them a little but not much and then put the onion and then the capsicum as well. Fry all this nicely till they are soft and nice and meanwhile let’s prepare the corn flour mixture to put in the gravy.
In a small bowl take 2tbs of corn flour that we kept aside and pour a little water and make a runny mixture of it.
Once the corn flour solution is made pour it in the pan with onions and capsicum and mix well.

Now it’s time for the spices to jump in. Put the Kashmiri red chili, black pepper, salt, soya sauce and vinegar into it and mix all of them together nice and well.

Step 4: Adding the paneer to the chili gravy
Now the gravy is almost done put the paneer cubes which we fried up earlier into the pan and mix everything well and nice so the paneer is coated well with the spices.
Add freshly chopped coriander and mix well.

Voila, it is absolutely ready to be enjoyed so serve it up!

Note:
1. Cut the capsicum and onions into big pieces.
2. Instead of corn flour one can use arrowroot powder as well.
3. Use 2tbs of corn flour at first and use the rest for the gravy.
4. Make sure to coat the paneer well and fry them nicely till they turn their color little yellow.
5. Fry ginger-garlic only a little not to turn them golden brown.
6. If you want a little gravy add a little water add arrowroot solution and make a nice gravy out of it. I preferred to make a dry chili.
7. Never use tomato sauce as it will ruin the taste of the chili completely.
