I have simplified the whole kadhai paneer recipe and one can easy make it today. The name kadhai paneer was given to this dish because kadhai is the most commonly utensil used in the kitchen of India and one can easily cook this up.

Ingredients:
1. Paneer: 250gms
2. Tomato: 2nos(cut into large pieces)
3. Onion: 2nos(Cut into large shreds)
4. Ginger: 1inch(cut into big pieces)
5. Onion: 1nos(cut into 1inch pieces)
6. Capsicum: 1nos(cut into 1inch pieces)
7. Fresh coriander: a little(chopped)
8. Kasuri Methi: a little
9. Salt: 1tbs
10. Kashmiri red chili powder: ½ tbs
11. Red chili powder: ½ tbs
12. Coriander powder: 1tbs
13. Garam masala : 1tbs
14. Garlic: 7-8cloves
15. Bay leaf: 2nos
16. Cumin seeds: 1tbs
17. Oil for frying(even you can use butter instead)
18. Fresh malai: a little
Method:
Step 1: Making the paste for gravy
Kadhai paneer tastes so well because of its mouth watering gravy. So let’s prepare that.
Take a medium kadhai and put 3-4tbs of oil and heat up. Now put chopped onions in it and fry them 1-2mins till they turn a little brown in color and then put the garlic cloves and stir fry a little. Now its time put the chopped tomatoes and cooks them till they turn a little soft. Now turn the gas off and put the fried onions and tomatoes in a blending jar and let it cool down before we make a fine paste out of it.
Step 2: Frying the ingredients
Now after we have made the paste for gravy use the same kadhai as the earlier one and put a little more oil in it and heat up. Now put the cumin seeds and let them crackle. Put bay leaf and stir fry a little and then put the chopped ginger in it and fry well.
Now finally put the diced onions and capsicum that we cut into 1inch cubes and fry a little but do not over fry it.
Step 3: Frying the spices
Now put the tomato and onion paste we made into the fried capsicum and onion and mix them well and fry a little. Now put salt, turmeric, Kashmiri red chili powder, chili powder, coriander powder, garam masala and mix them well and fry nicely.
When the spices have fried a little put the dried kasuri methi in it and mix it well and let the spices cook till they start to leave oil.
Step 4: Mixing the paneer finally
Now when the spices have fried nice and turned great colors, put the paneer pieces in it and mix well and cook.
Now put a little fresh malai in it or you can use amul cream as well so that the dish becomes rich and nice in taste.
Now put a little water as the gravy is thick and mix well. Put freshly chopped coriander and mix well and then cover with a lid and cook for 5 mins and check after that.
It should be done and the color would be rich and will taste amazing, So serve up and enjoy!

Note:
1. Cut the onion and capsicum into 1inch cubes.
2. Make a fine paste of the fried onion and tomato after they have cooled down and then use for the gravy.
3. Pour a little water for the right consistency of the gravy.
4. Fry the spices and paste, nice and well so that it starts leaving oil.
5. Adding kasuri methi by crushing into the gravy and mix well. Kasuri methi gives a great aroma and taste.
6. Add fresh malai for the richness of taste and instead you can use amul fresh cream or 8-10cashew paste.
7. Cover with a lid and cook for 5mins and then serve well and enjoy.
