Serves: 2people
Ingredients:
1. Mushroom: 200gms
2. Onion: 2nos(fine chopped)
3. Tomato: 2nos(pureed)
4. Red chili powder: 1tbs
5. Turmeric: 1tbs
6. Salt: 1tbs
7. Ginger-garlic paste: 1 ½ tbs
8. Garam masala: 1tbs
9. Coriander powder: 1tbs
10. Cumin seeds: 1tbs(approx)
11. Fresh coriander: a little(chopped)
12. Mustard oil
Method:
Step 1: Frying the Mushroom
The main king of this recipe is our mighty mushroom. So at first chop the mushroom into four pieces each and then turns on the gas and put up a pan on it.
Pour 2tbs of oil and heat up. Now when the oil is heated up put the mushroom and fry till they are soft. Now when they are tender, turn the gas off and take the mushroom out in a bowl. The water that the mushroom left, keep it aside.
Step 2: Making the Masala
By the time the mushroom needs to cool down let us prepare the masala. Now take the same pan and pour 3-4tbs of oil and heat up. Put the cumin seed and let it crackle and roast well. Now put the chopped onion and stir fry well till they turn a little golden brown.
When the onion is brown and nice put the ginger-garlic paste and fry for 1min.
Now put the dry spices in. Put turmeric and red chili powder and mix well.
Put the tomato puree in it as well and mix.
Turn the gas on high flame and put coriander powder, garam masala and salt and mix well.
The spices have cooked well and it has started separating oil so put 2-3tbs of water so the spices don’t burn off. Lower the flame and let it cook.
Step 3: Grinding the mushroom
Now the mushroom has cooled down so let’s grind the mushroom into a coarse texture not too fine a paste.
Step 4: Mixing the mushroom into the masala
Now the masala has cooked well, put the grinded mushroom in it and mix well.
While we were frying mushroom it secreted water which we saved up so we will put that in as well and mix.
Now we will add 2-3tbs of water and a little fresh coriander and mix them well. Turn the gas low and cover with a lid and cook for 5mins.
After 5mins check on it, I am sure it has turned out absolutely great. Veg Mushroom Keema is ready!
Step 5: Serving up!
Now serve up the yummy Veg Mushroom Keema in a bowl and enjoy with Parathas and great chapattis. Enjoy!

Note:
1. Fry the mushroom till they are nice and soft. Do not over fry it and then grind them into a coarse texture when they have cooled down.
2. Fry the masala well and add a little water so the masala doesn’t burn off.
3. Use the mushroom stock as well into the masala.
4. Put the mushroom into the masala and cook with covered lid.
