INGREDIENTS for appam

Raw rice, soaked for 3 hrs – 2 cups
Urad dal, soaked for 3 hrs – 1/2 cup
Grated coconut – 2 cups
Shallots – 15
Cumin seeds / jeerakam – 1/2 tsp
Salt
Water as required

INGREDIENTS FOR PAAL

Jaggery / Sharkara – 250 gm
Water – 3/4 cup
Fine rice powder – 1/2 cup
First extract of coconut milk – 1 cup
Second extract of coconut milk – 4 to 4 1/2 cups
Cardamom powder – 1 tsp

Pesaha appam is an unleavened bread made in Christian homes on Maundy Thursday. After Church, head of the family cuts the indari appam and dips it in pesaha paal. It is then served to other members of the family.

indri appam is made once a year and it is cut on the Passover night.

Here I have given the recipe for both pesaha appam and paal kurukku.
