Kerala Duck Roast || കൊതിയൂറും താറാവ് റോസ്റ്റ് || Tharavu Roast in Coconut Milk

Ingredients

Duck – 1 kg
Turmeric powder – 1/2 tsp
Salt as needed

To Crush
***********
Onion sliced – 2 nos
Shallots – 15 nos
Garlic – 8 cloves
Ginger – 1 inch piece
Green chili – 4 – 5 nos

Turmeric powder – 1/2 tsp
Red chili powder – 1 tsp
coriander Powder – 3 tbsp
pepper crushed – 1 tbsp
Garam masala – 1 tsp

Coconut Oil
Salt as needed
Vinegar – 2 tsp
Coconut Milk First extract – 1/2 cup
Coconut milk Second extract – 1 cup
Curry leaves

Cooking Method

Marinate duck with turmeric powder and salt. Set aside for 1/2 an hour.
Crush shallots, green chilies , ginger and garlic . Set aside crush mixture.
Soak Turmeric powder, red chili powder, coriander powder , pepper powder and garam masala powder in small amount of water.

Heat 2 tbsp Oil in a pan. Fry duck till golden brown in color . Set aside .
Rest of the Oil , Fry Onion till golden brown . Set aside.

Heat Oil in a pressure cooker, Add curry leaves , crushed mixture which set aside. Saute for 3 mins till the raw smell leaves.
Add soaked Curry powders, which is set-aside . sauté till raw smell leaves.
Add fried duck , sauté till the masala is well coated to duck. Add 1/2 Of the Fried Onion , Mix well.
Add thin coconut milk , Mix . Close the cooker . Cook Until Duck is soft.
Open the cooker, add Vinegar and mix well . Add thick Coconut milk , salt and pepper powder .
Add half fried Onions and curry leaves .
