This video shows you how to make Erissery with pumpkin and red cowpeas. Here red cowpeas / Chawli is cooked along with pumpkin cubes, simmered in ground coconut paste. To finish it of, a tempering of roasted coconut is given, which gives texture and intense flavor to this Erissery.
Ingredients for pumpkin erissery

Pumpkin, cubed – 2 cups
red cowpeas / chawli / vanpayar – 1/2 cup
chilli powder – 1/2 tsp
turmeric powder – 1/2 tsp
salt as needed
water
For grinding

grated coconut – 1/2 – 3/4 cup
green chilli – 2-3
shallots – 3
cumin seeds – 1/2 tsp
For tempering

Mustard seeds – 1 tsp
Dry red chillies – 3
Curry leaves
Grated coconut – 1/4 cup
Coconut oil – 2 tbsp
