Aval Vilayichathu is a traditional snack of Kerala. It’s considered a healthy snack as it is made with the goodness of beaten rice, coconut, and jaggery. Fried cashewnuts, black sesame seeds, roasted chana dal, and raisins are added, which enhances the flavor of aval varattiyathu.
Here jaggery is melted, sieved, and reduced to a jaggery syrup with a specific consistency, which is explained in detail in the video to make perfect aval vilayichathu each time.
Ingredients

Beaten rice/poha/red aval – 250 gm
Jaggery – 200 to 250 gm (I have used 200 gm here, if you prefer more sweetness, go for 250 gm)
Grated coconut – 2-3 cups
Cardamom powder – 1 tsp
Ginger powder – 1 tsp
For frying

Raisins – 2 tbsp
Roasted chana dal/pottukadala – 2 tbsp
Black sesame seed – 2 tbsp
