Thandai Kulfi Recipe | How to make thandai kulfi at home | Holi Special | Cooking Addiction Goa.

Kulfi is undoubtedly best classic and creamy frozen dessert on stick. thandai Kulfi is refreshing since it’s made with milk incorporated with various nuts, poppy seeds, aromatic spices, khoya and exotic saffron making it a perfect treat to enjoy during Holi celebrations.

✓ Ingredients & Quantity

Milk – 1 ltr
Sugar – 5 Tbsp
Saffron – few strands
unsweetened mawa / Khoya

✓ For Thandai Paste

Almonds – 60
Pistachios – 50
Cashewnuts – 50
poppy seeds – 1 tbsp
water melon seeds – 1 tbsp
fennel seeds – 1 tbsp
cardamom seeds – 1 tbsp
whole black pepper corns – 1 tsp

✓ Method
1) Add all the ingredients mentioned for thandai Paste in a bowl. you’ll can soak it over night if you want. this was just a quick method I followed.
2) Grind the nuts into coarse texture than add required water and grind into smooth paste and remove in a bowl.
3) Boil milk till it starts bubbling, add the ground thandai Paste and sugar. mix well, make sure the flame is low otherwise it will burn the mixture.
4) reserve some hot milk and add few strands of saffron to it and let it infuse. than add the mawa to it and mix well till the mawa dissolves completely.
5) Add this saffron and mawa infused milk to the Thandai mixture and cook stirring continuously till it thickens slightly.
6) strain the mixture to get rid of any impurities and cool it.
7) pour the mixture into the popsicles mould and freeze it for 3 hours till it retains it’s shape.
8) after 3 hours remove the popsicles out from the freezer and insert wooden stick into the center.
9) freeze it overnight and de mould it, serve as soon as possible. enjoy and happy Holi.
