■ Ingredients & quantity
Tendli (ivy gourd) – 1/2 kg
Salt – 1 tbsp

■ For Masala
Dried red chillies (Bedgi or kashmiri) – 20 nos
Garlic – 40 cloves
Ginger – 2 inch piece
Cumin seeds – 1 1/2 tsp
Cinnamon – 1 inch stick
Black pepper corns – 20 nos
Salt – 1 tbsp
Sugar – 5 tbsp
Toddy vinegar – 1 cup
Turmeric powder – 1 tbsp
Cloves – 20 nos

■ For tempering
Refined oil – 1 cup
Mustard seeds -1 tbsp
Curry leaves – 2 sprigs
Asafoetida (hing) – 1/2 tsp
