Teias de Aranhas means cobwebs in portuguese. It is popularly known as Gons. This tender coconut Candy is mostly prepared during Christmas season. Here is the recipe.

Ingredients & Quantity

Tender coconut with firm flesh cut into strips – 1
Sugar – 200 gms
Water -118 ml
Butter paper or white kite paper doilies

Method,
1) Scoop out the flesh and then scrap off the brown skin, the coconut should be pristine white.
2) cut the firm tender coconut flesh with sharp knife into thick & long strips like ribbons & soak in normal water.
3) In a deep & thick bottomed vessel put water and sugar and bring it to a boil. Stir to dissolve the sugar completely.
4) boil the syrup to a two sting consistency.
5) strain the coconut strips through a sieve to drain off the water completely.
6) Add the coconut strips to the syrup and cook till the mixture is thick. Make sure the sugar does not caramelize.
7) Switch off the heat and let the mixture rest. You should be able to drop the mixture on the butter paper.
8) place the butter paper on the tray. And drop the coconut mixture in small clusters on each paper cut out or doilies.
9) keep the trays of gons in a dry place to harden.
10) This may take a few hours or overnight to harden depending on the climatic condition.
11) serve fresh or store in the fridge in an air tight box.
