Ingredients & Quantity
* Semolina (Rava/Suji) – 1/2 Cup
* Almonds (Coarsely Chopped) – 20 Nos
* Cashewnuts (Coarsely Chopped) – 20 Nos
* Raisins (Roughly Cut) – 1/4 Cup
* Hot Water – 1 Cup
* Hot Milk – 1/2 Cup
* Saffron infused water – 2 Tbsp
* Clarified Butter (Ghee) – 2 Tbsp + 1/2 Cup
* Sugar – 1/2 Cup
* Cardamom Powder – 1/2 Tsp
Instructions
1) Heat 2 tbsp of Clarified butter in a pan, Add chopped almonds and cashewnuts and roast for a minute on low heat, then add roughly cut Raisins and roast for 30 to 40 secs until the nuts turn crunchy & golden brown, remove it in a separate bowl.
2) Heat 1 cup of water and 1/ 2 cup of milk and keep ready. Also infused few Strands of Saffron in 2 tbsp of hot water.
3) In the same pan heat 1/2 Cup Clarified butter, add semolina and roast for 2-3 mins on low heat until semolina turns aromatic and golden brown.
4) Now add hot water, hot milk, Saffron infused water over roasted rava and mix continuously.
5) Keep stirring until the rava starts to absorb the liquid thickens.
6) Further, add 1/2 cup sugar, Cardamom Powder and mix well until the sugar dissolves.
7) Add in friends nuts, Mix w, making sure everything is well combined and the suji is soft and fluffy.
8) Finally, enjoy suji halwa topped with more ghee if required.
