Soya Chunks can be a perfect vegetarian protein rich food. It is highly recommended for vegetarians. I have started including it in our diet as it can be a meat substitute. Soya chunks in kurma curry is a tasty dish to have with bread or rotis.

■ Ingredients & Quantity

Onion (finely chopped) – 1
Tomato (deseeded & chopped) – 1
Green chilli (chopped) – 1
Coriander leaves (chopped) – 1 tbps
Mint leaves (chopped) – 1 tsp
Turmeric powder – 1/2 tsp
Garam masala – 1/2 tsp
Red chilli powder – 1/2 tsp
Coriander powder – 1 tsp
Salt – 1 tsp
Refined oil – 3 tbsp

■ To marinate

Soya chunks(Soya wadi) – 1 cup (250 gms)
Ginger – Garlic paste – 1 tsp
Garam masala – 1/4 tsp
Red chilli powder – 1/4 tsp
Salt – 1/4 tsp
Lemon juice – 1 tbsp

■ To grind

Poppy seeds (khus khus) Lightly roasted – 2 tbps
Grated Coconut (roasted) – 1/2 cup
Fennel seeds(sauf) roasted – 1 1/2 tsp
Water – 100 ml

■ To temper

Bay leaf – 1
Star anise – 1/2
Cumin seeds – 1/2 tsp
Cinnamon stick – 1 inch
Cloves – 4
Green cardamon – 2
