Goan Okra and Kokum stir fry or in konkani you call it solantule bhende is a very popular way to cook okra in goan houses. Just a few simple ingredients go into the pot and result in a beautiful stir fry. Serve this vegetable hot with some chapatis or even as a side dish to some fish curry and rice for a complete Goan meal.

Ingredients & Quantity

Okra (Bhende/bhindi) – 1/2 kg
Onion (sliced) – 4 nos
Kokum peels – 4-5
Dried Red chilies – 3 nos
Cumin seeds – 1/2 tsp
Vegetable oil – 2 tbsp
Salt – 1/2 tsp
Water as needed

Method
1) Peel and slice the onions
2) trim both the ends of the Okra and cut into 1/2 inch pieces depending on the size.
3) Heat oil in a vessel, add cumin seeds once it sizzles, add the sliced onions and saute till its translucent. (You can also add 5 cloves of crushed garlic if you want)
4) Add the Okra pieces, kokum peels, dried red chilies, salt & water. Cover the lid and cook it on low heat for 5 mins.
5) open the lid and mix it slowly. Add more water and salt if needed.
6) cover the lid again and cook for more 5 mins till the Okra is perfectly cooked.
