Potato Curry Recipe | आलू की सब्जी | How to make potato curry | Cooking Addiction Goa.

Description :

This potato curry or aloo curry can be easily made with basic ingredients available in your kitchen and its delicious, flavorful and ridiculously easy to make. This Potato curry is best served with steamed rice, roti or Puri.

Ingredients & Quantity

Potatoes – 04 nos
Onions (chopped) – 3 nos
Tomatoes (chopped) – 02 nos
Green chili (slited) – 1 no
Ginger – Garlic Paste – 1 tsp
Cumin seeds – 1 tsp
Vegetable oil – 2 tbsp
Kashmiri Red Chilli Powder – 1 tsp
Turmeric powder – 1/2 tsp
Cumin powder – 1/2 tsp
Garam masala powder – 1 tsp
Coconut milk – 1/2 cup
Lemon juice – 1 tsp
Coriander leaves (Chopped) – 2 tbsp
Water as needed
Salt – 1 tsp

Method

1) Wash the potatoes thoroughly and put them in a deep bottom vessel. Add enough water to cover the Potaoes. Add 1 tsp of salt and bring it to a boil.
2) Once the potatoes are soft enough, remove and allow them to cool by keeping them under running water or a bowl of cold water. Once it’s cooled, peel the potatoes and cut into medium pieces.
3) Heat oil in a vessel, add cumin seeds and slited green chili and allow the cumins to Splutter (you can skip the green chili if you don’t want it to be bit spicy)
4) Add the chopped onions and sauté till the onions is light golden in color.
5) Add Ginger – Garlic Paste and fry for one 1 minute.
6) Add the all the masala (Red Chilli, Cumin, Turmeric, garam masala) fry for few mins
7) Add the chopped tomatoes and some water and cook for 5 mins
8) Add the coconut milk, salt, mix and bring it to a boil. Add the potatoes and mix well. Cover the lid and cook for 5 mins.
9) Finally add lemon juice and finish it off with chopped coriander leaves
10) Serve this potato curry with rice, roti or Puri. Happy cooking
