Month of july has Started and there’s heavy rainfall in goa. hog plum locally known as ambade is sour fruit which mostly grows during this season. i had some tender hog plums which i had plucked from my relatives place so i thought of making this recipe. hog plum is a healthy fruit because it is rich is vitamin c, calcium, iron and very high in fiber. this recipe is very simple, you only have to prepare brine..so now what is brine? Brine is high concentrated solution of salt in water and its mostly used to season or preserve food items. to make this recipe you will need,

Ingredients & Quantity

Indian hog plums (peeled) 20 nos
Garlic clove (peeled & crushed) 6 nos
Green chillies (slited) 4 nos
Salt to make brine 40 gms
Water 1 litre

Method,

1) wash and peel the hog plums as thin as possible. peel and crush garlic cloves and slit green chilies lengthwise.

2) boil 1 liter of water in utensil and then add salt and dissolve it properly.

3) switch off the flame and add slited green chilies, crushed garlic and peeled hog plums and give a stir. let the mixture cool down.

4) once its cooled down transfer into jar along with the liquid and tight the lid properly and keep it aside for a week, after a week you can use it as side dish along with parboiled rice.

5) you can also use this technique to vegetables like carrots, green chilies & garlic.
