Description :
Neureos/Nevris are deep fried dumplings similar to ravioli, but the filling and type is different, these are mostly made in India during Diwali, Ganesha chathurthi and Christmas as goodies to distribute everyone. Nuureos are also called as Karanji or gujiya in other parts of our country.
Ingredients & Quantity (stuffing)
Coconut (shredded & Roasted) – 200 Gms
Semolina (roasted) – 125 gms
Poppy seeds ( Roasted) – 25 gms
sesame seeds (Roasted) – 12 gms
Raisins (chopped) – 25 gms
Cashew nuts (chopped) – 25 gms
Cardamon powder – 1 tsp
Salt – 1/4 tsp
Sugar (Powdered) – 250 gms
For Coating,
Refined flour – 400 gms
milk – 125 ml
salt – 1 tsp
Semolina – 100 gms
Water – 250 ml
Refined oil – 1 litre
Method,
1) In a bowl add refined flour, semolina, salt, milk, water and make a soft dough.
2) once the dough is ready, cover it with damp cloth and let it rest for 20 mins.
3) Now will make the stuffing, first lightly roast, sesame seeds, poppy seeds, semolina, coconut until you get nice aroma.
4) Mix all the roasted ingredients with raisins, cashew nuts, sugar, cardamon powder, salt.
5) Divide the dough into 35 small portion and shape into balls, rollout each ball into a circle, put the prepared filling in the middle, fold over to make a semi circle and thinly flute the edges to seal it well.
6) heat sufficient oil in a kadai. the oil has to be hot enough, check by dropping a small portion of the dough in the oil, it has to rise immediately without browning. deep dry the karanji on medium heat until they are crisp and has a pleasant golden color, drain on a absorbent paper or perforated bowl.
7) Allow to cool completely and store in a air tight container.
