Mangaad/Mangada is goan homemade mango jam made with mussarat or alphonso mangoes. The portuguese word manga means mango. This jam is made with mango puree, sugar, lemon juice, pinch of salt, flavoured with cinnamon stick or cloves (optional). Traditionally its made in copper vessel (sottel) and wooden (Dhai). For longer shelf life this jam is kept in the refreigerator. Checkout this traditional way of making mangaad on wood fire.

Puree of Mussarat or alphonso mangoes (medium size) – 12
Sugar – 1 cup (250 gms)
Lemon juice – 1 tbsp
Salt a pinch
Cinnamon stick – 1 inch or 4 cloves
