Today’s recipe is a absolute winner in preparation and taste. It simple, easy, quick & requires very few ingredients. It is full of flavor, the aroma is heavenly and has just the right amount of spices allowing the chicken to bloom in its own juices.

Ingredients
1 kg whole chicken with skin (washed and offals removed)

For marinade
Ginger – Garlic paste – 3 tbsp
Red chilli powder – 2 tsp
Black pepper powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Salt 2 tsp
Lemon juice – 2 tbsp
Olive oil – 3 tbsp
Italian herbs chopped (thyme, oregano, rosemary, basil leaves) 2 sprigs of each.

Bed for the chicken
Onion – 5
Garlic – 1 big pod
Carrot – 5
Leek – 1
Olive oil – 1 tsp

For sauce
Water or stock – 200 ml
Refined flour – 1 tbsp

For roasted potatoes
Potatoes – 5 Nos
Salt – 2 tsp
Black pepper powder – 1/2 tsp
Olive oil – 3 tsp
Corriander leaves or parsley(chopped) – handful
