Ingredients & Quantity

Squids/Calamari (Cleaned) – 10 Nos
Onions (Chopped) – 4 Nos
Recheado Masala – 2 1/2 Tbsp
Oil – 2 tbsp
Salt – 1/2 + 1/4 tsp
Sugar – 1/4 tsp
Toothpick – 10 Nos

Method
1) Clean, wash, and drain the squids and keep ready.
2) Apply salt to the squids, simultaneously chop the tentacles into small pieces, and keep aside.
3) For stuffing heat oil in a pan, add onion and sauté till onion turns translucent.
4) Add the Recheado masala.

5) Add salt and sugar and mix well. Cook the mixture until the raw flavor from masala goes away.
6) Add the chopped tentacles and mix, cook for 5 mins until the moisture is slightly reduced.
7) Remove this mixture into a separate bowl and allow it to cool.
8) Now comes the main part, stuff the squids with the prepared mixture and cover the mouth with a toothpick and keep aside. Repeat this process for all the squids.
9) Place the prepared squids in the same pan in which the stuffing was made. Add the residual water. Cover the lid and cook for 5-7 mins. Open the lid and turn the squids on the other side and cover the lid. Cover for more than 5 mins.
10) Do not cook the squids for more than 10 mins as it will turn rubbery. You can reduce the liquid until it’s reduced and toss the squids to give it a glaze.
11) Serve this hot as an appetizer
