👉Ingredients & Quantity

Goan Red Rice – 1/2 kg (500 gms)
Fresh Coconut (grated) – 1 no (2 Cups)
Goan Toddy – 11/2 Cup
Salt – 1 or 2 tsp
Sugar – 1/2 Cup
Water as needed

👉Method
1) Add Goan Red rice in a bowl after removing any impurities in it. Pour enough water to cover the rice and let it soak overnight.
2) Next Morning wash the rice 2-3 times and drain it.
3) I’ve also taken freshly grated coconut and fresh goan toddy.
4) In a mixer jar add the soaked rice along with grated coconut and toddy and grind it into semi thick paste. You can do this in 2-3 batches.
5) Pour the batter in vessel, add salt and sugar, allow to ferment for 3 hours in a warm place.
6) Next Grease stainless steel katoris with oil, pour the fermented batter in the katori till half.
7) In a steamer pour water and bring it to a boil.
8) Place the katoris one by one into the steamer, cover the lid and steam for 25-30 mins.
9) Carefully remove the katoris and allow it to cool
10) Demould the sannas and serve with pork Sorpotel or any meat curries.

Note:
1) If you don’t get goan red rice you can use any other rice as well.
2) If the toddy Vinegar is fresh and strong the batter can get fermented much faster so keep a watch on it.
