Potato Bhaji is an authentic Goan Vegetarian dish which is served in most of the Goan restaurant’s along with Pao or Puri for breakfast. this dish can be prepared in two ways Sukhi (dry version) and Patal (Gravy version). In Goa, this dish is often served with salad bhaji or chana bhaji known as mixed bhaji.

Ingredients & Quantity

Potatoes (Peeled & Diced) – 5 nos
Onions (Chopped) – 2 nos
Green Chillies (Chopped) – 2 nos
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Curry Leaves – 12 nos
Vegetable oil – 3 tbsp
Salt – 1 tsp
Ginger – Garlic Paste – 1 tsp
Turmeric powder – 1/2 tsp
Water – 1/2 cup
Coriander leaves (chopped) – 2 tbsp

Method
1)Wash, peel & cut the potatoes into medium sized dices. place them is a bowl of water to prevent Browning.
2) Take a vessel half filled with water, add salt followed by the potato dices. boil for 20 mins till the potatoes are soft. drain the potatoes and keep it under running water, set aside.
3) Heat oil in a vessel, add Mustard seeds, Cumin seeds & Curry leaves, allow them to Splutter.
4) Now add chopped onions and saute for 2 mins
5) Add chopped green chillies and continue to fry for few minutes.
6) Now add ginger-garlic paste, turmeric powder, Salt and mix well.
7) Add the boiled Potato dices and mix well, add water and mix it thoroughly, cook for 2 mins on low heat
8) Check for salt if needed and finish it off with chopped coriander leaves.
