Description :

Vindaloo is a spicy Indian curry from Goa that is influenced by Portuguese cuisine. When the Portuguese explorers came to India, they made a dish “Carne de Vinha d’ Alhos“, which literally means a dish made of meat cooked with wine and garlic.

Goans modified the dish by adding Indian spices to it and cooking it in vinegar instead of wine. The fiery red and spicy vindaloo curry thus came into existence.

Vindaloo sauce is hot and spicy and is loaded with savory, lightly sweet, and tangy flavors. It is gluten-free and dairy-free.

This curry is very popular all around the world and you will find most Indian restaurants have it on their menu.

It was originally made using pork but now I have seen its versions with chicken, beef, lamb, mutton, fish, and even chickpeas, paneer, and tofu.

INGREDIENTS & QUANTITY

Chicken Pieces with bone – 1 Kg
Salt – 2 tsp
Sugar – 1 tsp
Vegetable oil – 4 tbsp
Onions (Peeled & Chopped) – 4 nos

For Masala,

Dried Kashmiri Red Chilies – 6 Nos
Cumin seeds (Jeera) – 1/4 tsp
Black Peppercorns – 6 nos
Cloves – 12 nos
Cinnamon stick -1 inch
Ginger (peeled) – 1/2 inch
Garlic (peeled) – 10 cloves
Turmeric powder – 1/4 tsp
Goan Toddy Vinegar or white vinegar – 1/2 cup

Method,

1) Wash and chicken pieces thoroughly at least 3 times and drain the water completely.
2) Grind all the ingredients mentioned for vindaloo masala into fine paste using only vinegar.
3) Add 1 tsp of salt to the chicken pieces along with the vindaloo masala and mix well. Marinate it for 40 – 60 mins.
4) Heat oil in a deep bottom vessel, Add the chopped onions and sauté till light brown in color.
5) Add the marinated chicken pieces and give a quick mix. Cover the lid and cook for 15 mins till the chicken is almost cooked.
6) Now check for taste and add 1 tsp salt and sugar and mix well.
7) Cook for more 5 – 10 mins and then take it off the heat.
8) Serve it with prawns or peas pulao. Happy cooking!
