Ingredients & Quantity

Coriander Leaves – 1 Bundle
Green Chillies – 5 Nos
Ginger – 2 inch
garlic – 10 Cloves
Cloves – 3/4 tsp
cinnamon – 1 inch piece
Toddy vinegar – 30 ml
Peppercorns – 3/4 tsp
turmeric powder – 1/2 tsp
fennel seeds – 1/2 tsp
cumin seeds – 3/4 tsp
sugar – 1 tsp
salt – 1/ tsp

Method,

1) Place all the ingredients on the grinding stone and start grinding it using vinegar till you get fine textured paste, use vinegar depending on the consistency of the masala it should be semi thick and not runny.
2) Once the masala is ready add sugar and salt to it and store it for later use. this masala is used to prepare chicken cafreal which is a popular goan dish.
