OK, so I made this tonight. It was so darn good!!! My wife and I spoke about the flavors throughout the whole meal. It is so perfectly balanced and the method is so spot on, that you will just have to try it to believe it. My opinion of this sort of curry was not super-high prior to this. Now we think it's literally the best thing we have eaten in a long, long, time. Well done Bong Eats. PS we did lower the sugar a bit from the recommended 28 grams to about 20 grams out of concern that it would be too sweet. We started with the sugar at 14 grams, but got a feeling for where the recipe could go, so upped it to 20 grams. Wonderful.
