Fried Onions or Birista
Description :
Almost any onion-based gravy (think, bhuna, kosha, kaliya) benefits from the addition of fried onions or birista along with sautéed onions. The golden, caramelised onions add a unique dimension to the preparation. Birista is also used as garnish for polaos, haleems, and several other dishes.
