Weekend cooking for guests .Ghee rice with coconut milk, mutton salna, chicken fry, prawn kootu, onion carrot raitha, fruit custard .
Ghee Rice Ingredients :-
Basumati or Seeraga samba Rice -1 .1/2 to 1.3/4 kg
Oil -100- 150 ml
Ghee -100 ml
Cardamom -8,cloves -8,cinnamon -3 pieces
Briyani leaf -2
Chopped big Onion -2 -3
Chopped Tomato -1
Green Chilli -6
Ginger garlic paste -4 table spoon
Curd -150
Lemon -small -1(optional)
Curry Leaves -few
Chopped Coriander & mint leaves -each quarter cup
Coconut milk from medium sized coconut &
Water -1 : 1+3/4
Salt – To taste.
Mutton -1 . 1/12kg
Oil -100 ml or little more
Ginger garlic pastE-2 tbsp
Garam Masala-1 tsp
Chopped Onion medium-4
Chopped medium Tomato -4
Green Chilli -6
Chopped Coriander,mint leaves -each handful
Curd-100 ml
Chilli powder-2 tsp
Coriander powder-2 tsp (optional)if you use home made curry masala no need to add.
Cumin Powder-1 tsp
Fennel powder-1 tsp
Salt -to taste.
to marinate mutton gg paste -1 tbsp,curd,home made masala 2 tbsp,salt.
To Grind:
Grated half Coconut or 1small coconut & 10 cashew nuts
PRAWN KOOTU :-
PRAWNS – 1 AND 1/2 KG
ONION – 2 LARGE
TOMATO – 2 LARGE
GG PASTE – 3 TSP
GARAM MASALA-1/2 TSP
CHILLI POWDER – 3 TSP
FENNEL,CUMIN POWDER – EACH 1 TSP
PEPPER POWDER – 1 TSP (OPTIONAL)
CHOPPED CORIANDER LEAVES,CURRY LEAVES
SALT TO TASTE
Dalcha ingredients:-
Toor Dal- 150gm
channa dal – 25 gm
Brinjal -250 gm
Mango small-1
Ash gourd or bottle gourd – few pieces
Onion-1 big
Tomato -1 big
Green Chilli -2
Turmeric Powder -1/2 tsp
Chilli powder-1 tsp
Coriander Powder-1 tsp
Cumin& fennel powder-1/2 tsp
Coriander mint leaves -few
Ginger Garlic paste -2 tsp
Garam Masala-1/4 tsp +1/4 tsp
Tamarind small Lemon size
Salt – to taste.
to cook mutton bones 1/4 kg add gg paste, garam masala,and curry powder – 1 tsp
For tempering:-
Oil – 1-2 tbsp
Mustard& urad Dal-each 1/2 tsp,fenugreek – 1/4 tsp
gg paste, chilli powder, garam masala – each 1/4 tsp
Dry Chilli-2
chopped Onion small -1
Few Curry Leaves.
Chicken fry :-
Chicken whole leg – 12-15 pieces (2-2-1/2 kg)
chicken 65 masala- 50 gm
kashmiri chilli powder – 2 tsp to give colour
garam masala- 1/2 tsp
gg paste – 2 tbsp
lemon – 2 small
egg – 1
corn flour – 3 – 4 tbsp
salt to taste
oil- to shallow fry.
Onion carrot raitha Ingredients:-
Thick Curd 2 cups
Chopped Onions -3
chopped carrot -1
Chopped green Chilli -2
Chopped Coriander leaves -few
Salt to taste.
Fruit custard :-
fruits -apple -2, pine apple chunks – 1 cup, mango -medium size-2,green &brown grapes – each 1/2 cup,banana -1
milk – 1 litre
custard powder – 4 tbsp
vanilla essence -1 tsp
sugar – 10 tbsp.
