Desiccated Coconut Baath (Goan Coconut Cake) | Batica | Bhaatk | Bhatk

A delicious coconut cake from Goa

Ingredients:

1/4 kg desiccated coconut
1/4 kg rava (semolina)
1 and 1/4 cup water
1/2 kg sugar
6 eggs
100 gms butter (I prefer using the salted butter)
1 tsp baking powder
1/2 tsp grated nutmeg
1/2 tsp vanilla essence

Boil the water, add the sugar and allow it to melt.

Then add the rava, coconut and butter.

Cook it for about 5 minutes on a slow flame

Cool the mixture

Beat the eggs until fluffy and add it to the rava mixture

Then add the vanilla, nutmeg and baking powder and mix well.

Line your cake tin with butter paper and add the mixture to it.

Note: If you don’t line your tin with butter paper and only dust it with oil and flour, then there are chances that the cake might stick to the bottom….. so for this cake, butter paper so your safest bet.

Bake immediately for 1 hour and 20-30 minutes at 200 degrees…. you can increase the heat to 220 degrees or little more during the last five minutes so that the crust gets brown.

Let it cook before you remove it from the oven….. use a skewer to check if it is done. If the skewer coming out clean, your cake is ready.

Note: You can also use freshly grated coconut…. just ensure that you grind your coconut fine after you grate it…… and after mixing the entire batter (except baking powder), you keep it over night….. you can add the baking powder the next morning and bake it immediately after that.
