Description :

INGREDIENTS:
• 2 cup roasted vermicelli / semiya
• 1 tbsp ghee
• 2 tbsp oil
• 1 bay leaf
• 1 inch cinnamon
• 1 star anise
• 3 cloves
• 3 pods cardamom
• 1 javithri
• 1 tsp cumin
• 1 tsp fennel seeds
• 1 tsp pepper
• 2 onion, sliced
• 1 tomato
• 4 chilli, slit
• 1 tbsp ginger garlic crushed
• ¼ cup carrot
• ¼ cup beans
• ¼ cup cauliflower
• ¼ cup potato
• Salt to taste
• 1 tsp red chilli powder
• ¼ tsp turmeric
• 1 tsp coriander powder
• 1 tsp garam masala powder
• 2 tbsp curd
• Fist full mint leaves
• Fist full coriander leaves
• 3 cup water

Method

1. In a large kadai heat 1 tsp ghee and saute spices.
2. now add onion, green chilli and crushed ginger garlic.
3. saute until onions turn golden brown.
4. Now add tomato saute until tomato turn mushy
5. Now add vegetables saute well.
6. keeping the flame on low add chilli powder, turmeric, coriander powder and garam masala powder.
7. add curd, mint and coriander.
8. add ¼ cup water cover and cook for 5 minutes
9. now add 3 cups of water and get it to a boil.
10. add roasted semiya and mix well.
11. cover and simmer for 10 minutes, or until water is absorbed.
12. Our semiya biryani is ready serve with raita.
