செட்டிநாடு எண்ணெய் கத்திரிக்காய் மசாலா / Ennai kathirikai dry masala / Stuffed Brinjal recipe

Ingredients:

Sesame oil : 3 tbsp
Brinjal (Baby brinjal) : 200 gram
Cumin seeds – 1 tsp
Mustard seeds – 1 tsp
Curry leaves – 2 spring
Salt to taste

To Dry Roast and Grind:

Red Chilly : 6 Nos
Channa Dal : 2 tsp
Urad Dal : 2 tsp
Coriander Seeds : 2 tspREPORT THIS AD
Pepper Corns : 1 tsp
Coconut (grated) – 3 tbsp

Method:

1. Wash brinjals, cut like flower blossoms of each brinjal and check for any worms. Also do not remove the whole stem on the top of brinjal, put them in water.

2. Heat a pan, roast items given in the list “dry roast and grind”. Transfer a grinded powder in a bowl.

3. Heat sesame oil in a pan, add mustard seeds, cumin seeds and curry leaves sauté for a minute. Then add brinjal along with ground masala powder and salt. Sauté well on over medium or low heat, continue stirring until it is well cooked both inside and outside.

4. Our ennai kathirikai masala is ready to eat. Serve with biryani or curd rice.

Notes:

1. Sesame oil is must for this recipe, because it gives nice flavor and aroma

2. Choose baby brinjals, I used small purple brinjals.
