INGREDIENTS

FOR DOUGH:
• 2 cup maida
• 2 tsp ajwain
• Salt to taste
• 2 tsp oil
• Water as required

FOR STUFFING:
• 1 tbsp oil
• 2 tsp cumin seeds
• 2 tsp coriander seeds
• 1 cup peas (boiled)
• 250 gram potato (boiled)
• 2 tsp kashmiri red chilli powder
• 1 tsp coriander powder
• 1 tsp garam masala
• Salt as required

OTHER INGREDIENTS:
• water, for sealing
• oil, for deep frying

Method

Samosa dough preparation:

1. In a large mixing bowl take 2 cup maida.

2. add 2 tsp ajwain, salt and mix well.

3. now add oil, crumble & mix the flour.

4. crumble and mix well making sure the dough holds shape.

5. add water and start to knead the dough.

6. knead to tight dough adding water as required.

samosa stuffing preparation:

7. In a large kadai take 2 tsp oil and saute cumin, coriander seeds.

8. add chilli powder, coriander powder and garam masala. saute on low flame until spices turn aromatic.

9. now add boiled peas and boiled potato and salt saute for 2 minutes.

10. mash and mix well until the spices are well combined.

11. mix well, samosa stuffing is ready. allow to cool completely.

shaping, folding and stuffing samosa:

12. knead the dough slightly again.

13. pinch a ball sized dough and grease with oil.

14. roll the dough into circle shape.

15. now cut in vertically, diving into 2 equal portions using a knife.

16. grease with water and make a cone. gently press so that it seals properly.

17. stuff 2 tbsp of prepared samosa masala into the cone.

18. grease little water on the edges.

19. pull back and create a pleat. this is very important as you are creating the backbone, helping samosa to stand.

frying samosa:

20. heat the oil in a kadai and deep-fry the samosa on a low flame.

21. stir occasionally, frying the samosa on low flame for at least 15 minutes.

22. once the samosa turns golden and crisp, drain off over kitchen paper.

23. enjoy vegetable samosa with green chutney and tomato ket
chup
