Description :

Method

1. Cut all vegetables (carrot, beans, cauliflower, broccoli, soya beans, paneer) and keep aside.

2. Wash Basmati rice once and soak in water for 30 mins.

3. Heat a pan. When warm add ghee and oil. Add bay leaf, cinnamon, cloves, mac.star anise, cardamom, cumin seeds, peppercorns and fennel seeds and saute for a minute till its aromatic. Add onion and saute till it turns golden colour.

4. Add ginger garlic paste, green chilies, tomato, and toss well till all the ingredients are combined and cook for 2 mins over low flame.

5. Add coriander powder, red chili powder, garam masala powder, yogurt, sprinkle coriander and mint leaves, salt and mix gently

6. Add vegetables and mix well and cook for a minute.

7. Add 2 cups water, Close the pan and bring it to boil.

8. When starts boiling add the rice to the pan and mix gently. Close
the pan and cook till the rice is fully cooked.

9. Switch off the flame open and fluff up the rice using a fork gently.

10. Vegetable biryani is ready to be served with onion raita.
