Vatha kuzhambu rice paste / வத்தக்குழம்பு சாதம் / Vatha kulambu rice thokku / வத்த குழம்பு தொக்கு

Ingredients

Tamarind – lemon sized ball
Coriander seeds – 3 tbsp
Chana dal – 2 tbsp
Toor dal- 2 tbsp
Urad dal – 2 tsp
Pepper – 1 tbsp
Cumin seeds – 2 tsp
Fenugreek – 2 tsp
Red chilly – 7 nos
Sun dried sundakai vathal / dried turkey berry – 50 gram
Sesame Oil – 6 tbsp
Mustard seeds- 1 tsp
Curry leaves – handful
Turmeric powder – ½ tsp
Hing – a pinch
Jaggery powdered – 2 tbsp
Salt to taste
Water – 1 cup

Method

1. Soak tamarind in warm water and extract thick juice.

2. Dry roast the ingredients chana dal, pepper, red chillies, coriander seeds, toot dal,cumin seeds, urad dal and fenugreek.

3. Roast in medium flame, until they let spicy aroma.

4. Turn off flame and allow to cool.

5. Grind to fine powder.

6. Heat oil in a fry pan.

7. Add sun dried turkey berry (sundakai vathal)

8. Sauté until it turns dark brown.

9. Drain and reserve.

10. In the same pan, add mustard, curry leaves.

11. Wait till mustard crackle.

12. Add the tamarind juice, add the ground powder, turmeric powder, salt and jaggery.

13. Stir well, add fried turkey berry (Sundakai vathal) and allow to boil.

14. Simmer and cover for 10 minutes.

15. Once it attains the thokku consistency, and the oil separates, remove from flame.

16. Allow to cool.

17. Store the Vatha kulambu thokku (rice paste) in air tight container. It will better for 2 months.

Note:

1. whenever you want vatha kulambu rice. take required amount of thokku to the hot rice mix it well.
