Vadacurry recipe/ Vada curry in tamil/வடகறி/ Chennai style vada curry

Method
For Vadai:
Chana Dal – 1 cup
Shallots – 6 nos
Dry Red Chillies – 2 nos
Fennel Seeds – 1 tsp
ginger – small piece
Salt to taste
Oil for Deep frying
Soak channa dal 3 to 4 hours. Drain it add it to blender, now add the other ingredients and grind it to a little coarse mix, dont add water. Now remove it to a bowl . heat oil for deep frying, drop small dollops of this mix and fry till golden. Remove it to paper towel.
Grind Together:
Ginger – 1 inch piece
Garlic – 4 Flakes
Red Chillies – 4
Green Chillies – 2
Cinnamon – 1 inch piece
Cardamom – 3
Cloves – 3
Roasted gram – 1 Tblsp
Dhania (Coriander) – 2 Tsp
Cumin Seeds (Jeera) – 1Tsp
Fennelseeds (sombu)- 1 tsp
Add all ingredients in mixie add little water and grind it fine paste. keep it aside.
For Gravy:
Sliced Onions – 2 nos
Peeled Garlic – 6 pods
Tomato – 3 nos
Salt
Turmeric Powder
1. Heat oil in a deep pan and saute garlic, onions until golden.add tomato salt, turmeric powder mix it well.
2.Add ground paste and fry until oil separates. add 3 cups of water,. mix it well and Boil for 5 minutes. Add fried vadai and cook again 3 minutes on low flame.
3.switch off the flame.garnish with coriander leaves
