Method
1. Melt sugar in water and bring it to 1/2 string consistency. Once the sugar dissolves and comes to a boil turn down the heat to low and simmer it for 6 -7 minutes. Once the syrup thickens and reaches 1/2 sting consistency turn off the heat .
2) Soak rice and dal in water for 3-hours. Add little water and grind it to a smooth paste. The consistency should be like idli batter, should not be watery.
Then add some orange food color and baking soda.
3) Heat oil in a pan – Oil should be on medium heat. Wet your hands in some water and make small balls and drop it in oil. It should come to to surface of the oil immediately .Fry until they are nice and crisp on all the sides.
4) Once they are nice and crisp drain the excess oil and dunk into the sugar syrup immediately. The syrup should be little warm while adding the fried balls (if it is not warm heat it for a minute )
Soak in sugar syrup for 10 – 15 minutes.
5) Once they are nicely soaked take it off from the syrup and allow it to dry for sometime and then we can store it in air tight container.
