Spring onion tomato curry/Spring onion tomato masala/வெங்காயத்தாள் தக்காளி மசாலா/Spring onion sabji

Ingredients:
Spring onions – 200 gram
Onion – 1 no
Green chilies – 2 nos
Tomatoes (chopped) – 4 nos
Ginger (chopped) – small piece
Garlic (chopped) – 4 pods
Oil – 2 tbsp
Mustard seeds 1 tsp
Fennel seeds – 1 tsp
Curry leaves 2 Springs
Turmeric powder – ½ tsp
Cumin powder 1 tsp
Red chili powder – 1 tbsp
Garam masala – 1 tsp
Salt as required
Water – ¼ cup
Method
1. Heat oil in a pan and add mustard seeds, fennel seeds, curry leaves, onion, ginger, garlic, and green chilies sauté it.
2. Add tomatoes, turmeric powder, cumin powder, red chili powder and salt sauté well.
3. Now add the water and mix it well. Cover and cook it for 2 mins on low flame.
4. Then add spring onion sauté well cover again and cook it for 2 mins.
5. Once done add garam masala and sauté it.
6. Now the dish is ready to serve with roti or chappati
