Ingredients (per plate)
• Pani Poori (about 10 puris)
• Pattani masala as required
• 2 tbsp finely chopped onions
• 1 tbsp finely chopped tomato
• 1 tbsp grated carrot
• 1 finely chopped green chili
• 3 sprigs coriander leaves, finely chopped
• 1 tbsp sweet chutney
• 1 tbsp green chutney
• A pinch of black salt
• 2 tbsp boondi
• 2 tbsp plain sev

Method
• Arrange the poori’s on a plate and roughly crush them. Pour about 3 ladle fulls of the gravy and top it with onions, tomato, carrot, green chili, coriander leaves, black salt, sweet chutney, green chutney, boondi and sev.
• Serve Masala Poori hot with onion topping
