Ingredients
• 1/4 cup Sugar For Caramel
• Water 2 tbsp
• 1/4 cup Sugar For pudding
• 1/4 cup Rava
• 3 tbsp butter
• 1/2 ltr Milk Full cream
• 3 Eggs
• 1 tsp vanilla essence
Method
1. Take 1/4 cup of sugar with 2 tbsp of water in a saucepan. Place it on the stove. Start heating it. Keep stirring, the sugar will start melting.
2. Once the sugar completely melts, the colour of the sugar turns into a golden brown colour. It quickly gets thicken also. You have to watch it properly, once the colour turns immediately you need to turn off the stove. Within seconds the sugar will burn and it would give a bitter taste. So be careful, do not burn, as soon as the colour changes, stop boiling.
3. Immediately pour into the bowl, it will be very hot, so be careful. Tilt and make sure the caramel is spread evenly in the bowl.
4. Now let’s make the Rava pudding part. First, take a Kadai, add the milk into the Kadai, start boiling it.
5. When the milk starts boiling add the butter and sugar stir well for 2 mins.
6. Now add the Rava also into that milk.
7. Stir well, do not make any lumps. Once you get the kheer consistency switch off the flame and keep it aside.
8. Now take another bowl, add the eggs and vanilla essence beat well. Once the egg is ready, mix the egg with Rava mixture and combine everything well without any lumps.
9. Once you get the smooth texture, transferred to the caramel bowl cover with aluminium foil and make some hole on the top.
10. Now get the steaming vessel ready with the boiling water and place the bowl, cover and cook it for 30 to 40 minutes.
11. To check whether, it sets or not, use a knife. If it comes out clean, it is ready.
12. The important thing, once it is done is you have to wait until it cools down well, otherwise the pudding will fall apart when you take. So make sure it completely cools down.
13. The resting time is very important, do not compensate on that.
14. Once it is done. Take it out, just insert the knife on the sides, to make sure it won’t stick when you reverse it on a plate. Cover with a plate carefully, and just turn upside down quickly. place it on the countertop, pat the bowl slowly. the pudding will fall on the plate with caramel on top.
15. Our tastiest caramel rava pudding is ready to eat serve warm or chill.
