POONDU KUZHAMBU / GARLIC KUZHAMBU / POONDU KARA KULAMBU / POONDU PULI KUZHAMBU / பூண்டு குழம்பு
Description :
INGREDIENTS
• 50 gram Garlic cloves
• 50 gram shallots
• 2 nos Tomato medium size
• 1 cup tamarind water ( lemon size Tamarind )
• Salt to taste
• 1/2 tsp Turmeric Powder
• 1 tbsp Coriander Powder
• 1 tsp Red Chili Powder l
• 1 tsp Pepper Powder
• 1 tsp sambar Powder
• 3 tbsp Gingelly Oil preferably
• 1 tsp Mustard seeds
• 1 tsp Fenugreek seeds
• 1 spring Curry leaves
• 2 nos Red Chili
• 1 tsp jaggery powder
• Coriander leaves
• pinch of hing
Method
Soak the tamarind in water and extract the juice.
• peel the garlic skin and if they are big, chop them into two.
• Finely chop the Onions and Tomatoes.
• Heat a pan with oil. Add mustard seeds and fenugreek seeds. when the mustard seeds starts to sputter. Add garlic, shallots, red chilies and curry leaves.
• saute them till the onions becomes transparent.
• Then add chopped tomatoes, turmeric powder, red chilli powder, sambar powder, pepper powder and coriander powder and salt. mix well and saute them till they get completely cooked and becomes mushy.
Add tamarind extract and water and allow it to boil. Cover and cook for 5 minutes.
Finally we would get a sightly thick consistency of kuzhambu. Now we add jaggery powder, coriander leaves and hing. Mix it well. Cover and cook for another 2 minutes.
