Periya Nellikai urukai/Amla pickle in tamil/Gooseberry pickle/நெல்லிக்காய் ஊறுகாய்
Description :
Method
1. Dry roast fenugreek seeds & Mustard seeds and powder it. Keep it aside.
2. Wash 10 nos gooseberries well and add boiling water cook for 10 minutes. Do not overcook. When you press the gooseberries, it should open in segments like a flower .That is the right time to switch off the gas.
3. After it cools, drain the water and remove the seeds.
4. Heat 1/4 cup sesame oil in pan, add 2 tsp mustard seeds when they splutter, add 1 tsp cumin seeds, add 10 pods Garlic, 10 nos dry red chilies, curry leaves, saute well.
5. add cooked gooseberries fry till turns golden. add 4 tbsp Chilly powder, 1/2 tsp Turmeric powder, 1 tbsp of mustard seed and fenugreek seed powder and salt. saute well everything mix together
6. allow it to cool. Store it in a clean, dry glass bottle and refrigerate it. Take needed quantity in a small cup for daily use.
Do not use wet spoon. It stays good for a month in the refrigerator. Mix it well once in a week.
