peanut chutney / வேர்கடலை சட்னி செய்வது எப்படி / Andra special peanut chutney /verusenaga pachadi

Description :

Ingredients
• 1 cup of peanuts/groundnut
• 2 tbsp oil
• 4 Red chillies
• 10 shallot
• 8 Garlic cloves
• Small piece of tamarind
• 3 tbsp coconut (grated)
• salt – to taste
• 1/4 cup water
For tempering:
• 1 tbsp oil
• 1 tsp mustard seeds
• 1 tsp chana dal
• 1 tsp urad dal
• 2 dried red chillies
• 1 spring curry leaves
Method
1. Heat a pan adds 2 tbsp of oil add peanuts into it and roast them for few minutes.
2. Cool them down, and rest them aside.
3. In a same pan, same oil add shallots, garlic, red chilies and grated coconut. saute for few minutes on low flame
4. Cool them down and set aside.
5. In a blender, add roasted peanuts and add the cooked mixture of chillies & onions.
6. Add tamarind & salt.
7. Add water as per consistency required.
8. Blend the chutney into a fine paste.
9. Transfer the chutney into a bowl.
10. In a sauce pan, add oil and heat it.
11. Add mustard seeds and allow them to pop up.
12. Add chana dal & Urad dal fry till golden colour.
13. Add dried red chillies & curry leaves and stir for few seconds.
14. Transfer this tempering all over the chutney.
15. Serve the chutney with idli, dosa uttapam etc…
