Description :

for bhaji:
• 2 tbsp + 2 tbsp butter
• 1 tsp cumin seed
• Onion – 2 nos (finely chopped)
• Green chilies – 2 nos
• Ginger garlic – 1 tbsp
• Tomato – 2 nos
• Potato – 2 nos
• Carrot – 2 nos
• Beans – 10 nos
• Peas – 1 cup
• Beetroot – 1 no
• Turmeric powder – 1 tsp
• Red chili powder – 2 tsp
• Pav bhaji masala – 3 tbsp
• Salt to taste
• Water to adjust consistency
• Lemon juice – 2 tbsp
• Coriander leaves

to toast pav:
• ▢2 tbsp butter
• ▢ 4 pav / bread roll
• ▢ ¼ tsp pav bhaji masala

Method
1. In a pressure cooker add 2 tbsp butter. Add cumin seeds.
2. Add onions and green chili. Sauté until transparent.
3. Then stir in ginger garlic paste and fry for 30 seconds.
4. Add the tomatoes and saute until the tomatoes turn soft and mushy.
5. Add all the veggies – potatoes, carrots, beans, peas and beetroot. Sauté for 2 minutes.
6. Now add turmeric powder, red chili powder, pav bhaji masala powder and salt. Sauté for 2 minutes.
7. Pour 1 cup water and mix well. Close the lid.
Pressure cook for 6 whistles. Once pressure is released.
8. With a masher, mash all the veggies well. Let the bhaji simmer for 5 minutes. It will thicken.
9. Add lemon juice, coriander leaves and butter. Mix it well.
10. Slit each bun to 2 horizontally. Heat a tawa. Smear some butter and sprinkle pav bhaji masala over the butter.
11. Toast the pav until lightly crisp.
12. Serve pav bhaji with butter, chopped onions, coriander leaves and lemon wedges on the side.
