Pattani masala for masala poori & bhel poori / பேல் பூரி மசாலா பூரிக்கு சுவையான பட்டாணி மசாலா

INGREDIENTS
FOR PRESSURE COOKING:
200 gram white peas
2 potato, peel & chop
3 carrot peel chop
3 cloves
1 bay leaf
FOR MASALA PASTE:
1 tbsp oil
1 tsp fennel seeds
2 onion, sliced
ginger small piece
5 garlic pods
2 green chilies
2 tomato, chopped
fist full mint / pudina
fist full coriander / kothumalli
2 tsp chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp garam masala
FOR CURRY:
2 tbsp oil
salt to taste
Water as required
Method
1. in a large bowl take 1 cup white peas and soak in enough water for 8 hours.
2. take soaked peas in the cooker and add 2 potato, 3 carrot, 1 bay leaf and 3 clove.
3. add 1 cup water and pressure cook for 4 whistles.
4. Take 1 scoop of cooked white peas keep aside.
5. mash the remain white peas, potato slightly, adjusting the consistency as required. keep aside.
6. now prepare masala paste by heating, 2 tbsp oil and saute 1 tsp fennelseed.
7. also add green chili, garlic, ginger and onion and saute slightly.
8. add tomatoes and saute until the tomatoes turn soft and mushy.
9. add turmeric powder chilli powder, coriander powder, and garam masala.
10. saute on low flame until spices turn aromatic.
11. cool completely and transfer to a blender.
12. Add cooked peas, mint and coriander.
13. blend to smooth paste adding water if required. keep aside.
14. in a large kadai heat 2 tbsp oil add ground masala paste. saute few minutes.
15. add boiled mashed white peas and mix well.
16. add 1/4 cup water and required salt.
17. mix well adjusting consistency as required.
18. cover and simmer for 5 minutes, or until the flavours are well absorbed.
19. Pattani masala or masala puri curry is ready to enjoy.
