INGREDIENTS
FOR MASALA STUFFING:
• 1 tsp chilli powder
• 2 potatoes, boiled and pealed
• 1 tsp cumin powder
• 1 tsp garam masala powder
• salt to taste
FOR PANI:
• Handfull of coriander leaves
• Handfull of mint leaves / pudina
• Curry leaves – 2 spring (optional)
• 1 inch ginger
• 2 green chilli
• ¼ cup tamarind juice
• 1 ¼ cups water
• 1 tsp cumin seeds
• 1 tsp peppercorns
• 1 tsp garam masala
• salt to taste
Method
MASALA STUFFING RECIPE:
1. in a large bowl mash boiled potatoes.also add cumin powder, chilli powder, garam masala powder and salt.
2. mix well and mash completely. masala is ready for stuffing.
PANI FOR PANI PURI RECIPE:
1. in a mixie jar take coriander leaves, mint leaves, curry leaves,ginger green chilli, cumin seeds and peppercorn.
2. add little water and blend.
3. filter it using a sieve.
4. add a cup more water to extract the juice from mint and coriander.
5. then add tamarind juice.
6. also add garam masala powder and salt.
7. give a good mix and pani is ready
