Description :

Ingredients:
4 Pieces Mutton Brain
1 Onion Finely Chopped
2 Sprigs Curry Leaves
1 chopped tomato
2 Tbsp Fresh Coriander
2 tsp Chilly Powder
1/2 Tsp Turmeric powder
1 Tbsp Coriander Powder
1 tsp garam masala powder
3 tbsp sesame oil

Masala Paste:
2 tbsp Coconut
1 Inch Ginger
10 Pods Garlic
10 shallots
2 Chilies
1 tsp Tsp Fennel
1 tsp cumin seeds
1 Tsp Pepper Corns
3 Cloves
1 Cinnamon stick

Method:

1.Soak Brain in hot water for 5 minutes this helps in cleaning.

2.In a mixer jar add 10 chopped shallots, pepper corns, garlic, fennel, cumin seeds,cloves, cardamom, ginger, garlic, cinnamon, coconut and chilies grind to form a smooth paste add splash of water if needed to grind the masala paste.

3. In a kadai add 3 tbsp oil temper the oil with bay leaf, curry leaves once the curry leaves splutter add finely chopped onion fry till onions turn transparent.

4. Add the masala paste to the onion along with chilly powder, turmeric, garam masala powder and coriander powder fry until raw flavor from the masala has gone.

5. Add salt to the masala if you want gravy add water to create gravy for dry masala add 1/4 cup water to the onion masala fry till oil separates.

6. Add brain to the masala toss to coat cover and allow to cook for 10 minutes with gentle hands stir and fry the brain until done dish out garnish with chopped coriander.
