INGREDIENTS
• 2 tbsp oil
• 1 tsp mustard
• 1 tsp cumin
• few curry leaves
• 1 onion, finely chopped
• 1 green chilli, finely chopped
• 1 inch ginger, finely chopped
• ¼ cup carrot finely chopped
• ¼ cup beans finely chopped
• ¼ cup beetroot finely chopped
• ½ tsp turmeric powder
• Salt to taste
• 500 gram potato, boiled & mashed
• Coriander leaves, finely chopped
• Idli batter – 1 cup

Method:

1. In a kadai heat 1 tbsp oil and add 1 tsp mustard and 1 tsp cumin. saute and allow to splutter

2. further add 1 onion, 3 green chillies and 1 inch ginger. saute well.

3. add ¼ cup finely chopped carrot, ¼ cup finely chopped beans, ¼ cup finely chopped beetroot sauté well. add ½ tsp turmeric and salt. mix well.

4. Add ¼ cup water cover and cook it for 5 minutes on medium flame.

5. Now add boiled and mashed potato. Combine well.

6. Turn off the flame and add coriander leaves and curry leaves.

7. Mix well and potato masala is ready to prepare masala stuffed idli.

8. Take lemon sized ball from masala mixer and make it small cutlet shape. Keep aside

9. Place idli maker on your stove and fill bottom of vessel with water

10. . Now place your idli plates on it. Pour ½ scoop of batter in the bottom and place the masala mixture on top. Now ½ scoop of batter again on top. Make sure that everything is totally covered.

11. Cover and cook it for 10 mins.

12. Check with knife. Insert and if it comes out clean then your masala stuffed idli is cooked.

13. finally, serve Masala stuffed idli hot with onion chutney and sambar.
