INGREDIENTS
Cooked rice – 1 cup
Raw mango – 2 nos (grated)
Oil – 3 tbsp
Mustard seeds – 1 tsp
Chana dal – 1 tsp
Urad dal – 1 tsp
Cumin seeds – 1 tsp
Roasted peanuts – 3 tbsp
Shallots – 10 nos (finely chopped)
Red chilies – 3 nos
Green chilies – 3 nos
Ginger – small piece (finely chopped)
Curry leaves – 3 springs
Turmeric powder – ¼ tsp
Salt to taste
Coriander leaves
Method
1. Heat oil in a kadai.
2. add in mustard, urad dal, chana dal and cumin seeds. Allow to splutter.
3. add roasted peanuts and saute for a minute.
4. Add finely chopped shallot,ginger, red chilies, green chilies and curry leaves. Sauté till onion turn golden brown.
5. add raw mango, turmeric powder and salt.
6. saute for a minute or till mango shrinks.
7. now add cooked rice.mix gently without breaking rice grains.
8. add coriander leaves. mix it well.
9. serve mango rice with your favorite snack.
